JW: Okay, if you are not shy, just hold a local and like, “Hey, what do you think about the road, see it.” And then they will probably have an opinion. The people of Singapore have a lot of opinion about our food, but otherwise we are very competitive as a culture. You can’t really be wrong. I think the statistical 300 new restaurants are open in Singapore a day, and therefore to last because we have limited land space, they will really have to prove their merit.
La: Singapore’s dining scene has such a huge global access. I mean here too in New York, I can try all different types of foods such as Malaysian Sate and my favorite Indian curry puffs. You have found a series of such people and chefs and types of food. What should people order in hawkers centers? I know that some hawkers have Michelin stars in centers.
JW: Oh yes
La: I mean it is like a whole scene in itself. What order should people order?
JW: So Chile is part of the crab, it is our culture, so you want to go to a hawker center, which has a type of specialist, and you just do not have to do chili crab – you can do black pepper crab, you can do steamed crab, you can do garlic butter crab. There are just many types. This is very good.
